The Yummiest Christmas Cupcakes

By yummycakes · Comments (2)
Sunday, December 19th, 2010

I made four different cupcakes this year for the “Yummy” cupcake gift boxes. I love trying out new recipes, always searching for the best I can find or improve upon. With the help of my daughter we baked and taste tested a lot of recipes weeks before we chose which four to include in the package. In the end we voted with the criteria being we had to love each one of the four cupcakes.

The winners were a chocolate cupcake with a surprise York peppermint patty cooked in the center then frosted with pink and white peppermint cream cheese. Another chocolate cupcake, this small cake was filled with mini chocolate chips topped with a marshmallow frosting, large chocolate chips and pecans for an amazing rocky road cupcake. A gingerbread cupcake light and moist with a lemon cream cheese frosting sprinkled with cinnamon, (That particular recipe came from a winning recipe on Cupcake Wars, Foodnetwork. com, they have seventy five recipes worth looking at.) A red velvet cupcake with a bright red inside with the traditional Southern cream cheese frosting, I added shaved white chocolate to give it a holiday look. White chocolate in or on your cream cheese frosting is always fantastic. I gained five pounds easy testing these recipes, but in the end it was so worth it, everyone loved them.

The Best Spiced Pumpkin Cupcake

By yummycakes · Comments (0)
Thursday, December 2nd, 2010

I say it all the time baking in the fall and winter is the most fun for me, it warms up my always chilly kitchen, makes the house smell like a giant sweet cookie and gives me something fun and memorable to do with the ones I love most.

I love the tastes of fall and decided to test three different recipes from three famous Chefs to find the perfect seasonal cupcake. Bobby Flay’s gingerbread, the owner of Spinkles in California, Candace Nelson’s spice, and the head Chef of Dean & DeLuca in Manhattan, Scott Annand’s spice pumpkin.

Five pounds heavier and three days later, me and a few family taste testers picked a winner. One was a little too dry, one cooked with a crusty hard top and one came out pretty darn good. The spiced pumpkin by Scott Annand, was moist with a perfect combination of spice and pumpkin taste. Continue reading for recipe.

A Halloween Cupcake

Instead of coming up with some crazy new fondant creations for the top of my Halloween cupcakes. I decided this year to take on the challenge of designing a human Halloween cupcake. It was so much fun and in the end took a lot less time to make than the mermaid, octopus, 50′s waitress, Chinese girl, skunk, bee, flower, fairy, and snow princess costume, just to name a few from years past. I made them all, a tradition handed down from my mother. She was an excellent seamstress and wonderful artist who would have never dreamed you could go to the store and buy something to wear on this night of candy and parties. She blessed me with some of her endless talent and maybe cursed me. I feel her looking down on me from heaven saying, “don’t even think about it,” when my calendar is full of commitments and I pass by those costumes in the store that are getting more cute and fun every year.

Cupcakes from Sweet in Boston, MA

It was a gorgeous day yesterday. Warm enough to walk around in a light sweater bright and sunny. If fall is your thing you could not have been unhappy with a day like that in New England. My daughter, assistant cupcake tester extraordinaire and I headed north on our quest for one of the two  Sweet cupcake shops in Boston. Traffic was light conversation was snappy a fast trip down the Mass. Pike and we were in the city. We drove by the first Sweet shop in Back Bay, very easy to miss if you were not paying attention, so keep your eyes on the store signs. We headed over the bridge to Harvard Square after the typical challenge with parking we were finally on foot and enjoying the scenery. Crowded streets, music playing, a lot of people sitting outside, families, couples and students mulling about everywhere. Read More→

Delicious Strawberry Cupcake

Delicious Strawberry Cupcake Recipe

I had to find a really great strawberry cupcake recipe for my best friend’s birthday party for whom her cake of choice is ever only strawberry. She and her husband are both extraordinary chefs and have been working in the business of food for quite sometime. So after I offered my services to the birthday party hostess her wonderful grandmother that I would be in charge of bringing the dessert. I felt a responsibility, a challenge. Every time I do a cake I look for I think what most of us look for, that it absolutely has to be moist, have a distinctive melt in your mouth flavor, not overly sweet, and that it is paired with the best icing to enhance the taste of the cake. Halloween cupcakes

I searched for fun and maybe something a little different in the way of cupcake ideas for Halloween. I was doing cupcakes for a friends dance class, tween age girls so I was not going for the super adult gore. I did not see one thing where I said, that is it perfect, just the usual constant reoccurring themes. So I decided to latch on to one idea and see what I could do to make it fun. My muse? The expressive, spooky eyeball with its limitless creepy possibilities. Read More→
